Mini Beef and Veggie Meatloafs

When I get the ” I have nothing to make for dinner” feeling, or am feeling un-motivated to cook, this is my go to meal! I buy Novy Ranch grass fed beef at my local farmers market in bulk. It saves significantly on price, plus my freezer and fridge is always stocked with good quality meat, that can turn into a simple dinner in no time! I always try to have a pound or two ready that I’ve thawed in the refrigerator that can be turned into meat loaves, patties, tacos, or meatballs. This simple meat loaf recipe is not only so tasty, simple and quick, but it’s incredibly healthy! Perfect meal for little ones too!

Ingredients
  1. 2lbs grass fed beef
  2. 1 zucchini
  3. 1 yellow squash
  4. 2 cloves fresh garlic
  5. 2 TBL worcestershire
  6. 1/2 tbsp sea salt
  7. 1/4 tbsp pepper
  8. drizzle of organic ketchup (for topping)
  9. sprinkle of vege-sal.
Instructions
  1. Combine 2lbs grass fed beef, 1 zucchini and 1 yellow squash finely chopped, a good sprinkle of sea salt, pepper, 1 TBL. organic ketchup, 1TBL. worcestershire sauce, 2 cloves fresh garlic, and a sprinkle of vege-sal.
  2. Form into oversized meatballs then flatten. Drizzle ketchup over meat loves for a splash of flavor.
  3. Bake at 400 for 10-15 min along with the asparagus, they're done about the same time.
